Thanksgiving Style


Thanksgiving style 🐔

I love starters and nibbles at this time of the year, but they can be filled with absolute rubbish!! This is why i modified the classic Bruschetta!!

Ingredients :

- 1 sweet potato ( sliced into rounds )

- 1 cup of ricotta cheese

- Tsp of Cinnamon

- 1 1/2 tbsp of tablespoons of honey

- 1 1/2 tsp of Italian herb seasoning

- 1tbsp of olive oil

- 1 cup of chopped walnuts

- 1/4 cup of dried cranberries

- Salt and pepper

Recipe :

- Preheat oven to gas mark 6

- Add ricotta cheese, herbs ,salt and honey in a bowl and mix. Store in the fridge until ready to use

- Slice sweet potato in 1/4 inch rounds and place into a bowl. Add oil, cinnamon and a sprinkle of salt to the potatoes. Mix with your hands

- Arrange potatoes on a baking sheet and place into the oven for 20 minutes ( until edges are crispy )

- Flip over after 20 minutes to the other side

- Bake walnuts in the oven for 10 minutes ( for crispiness )

- Remove sweet potatoes once they are crispy

- Place a small amount of cheese mixture onto the rounds and grill until slightly melted

- Add walnuts, cranberries and drizzle honey over rounds!
