Chicken & Veg Soup

A delicious healthy, hearty soup for you guys to try! Only takes 40 minutes from start to finish! Rosemary is my new favorite herb to add to everything, so this soup is perfect for it! 🍲 Ingredients :

  • 3 tablespoons of olive oil

  • 4 chopped carrots

  • 4 chopped stalks of celery

  • 1 small sweet onion

  • 32oz of bone broth ( if you can make your own 👏🏼🙌🏻)

  • 200 grams of chicken

  • 1/2 cup of pearl barley

  • 2 springs of fresh rosemary

  • Salt and pepper to taste

. Recipe :

  • Heat oil in pan over medium heat. Add chopped vegetables until onions turn brown.

  • Add bone broth, barley and chicken to the pot. Bring to simmer.

  • Strip the leaves from rosemary and add to soup. Cover and simmer for 30 minutes.

  • Remove the chicken and shred it. Add it back to soup and stir

  • Serve in warm bowls and keep it in the fridge for a few days
